There's this girl that i have got to know really well and i think i love her. She told me she fancies me and wants something to happen between us but now she got back with her ex for the third time, whats the best way to approach this?

Let her be. If this is the third time she's gone back to her ex, she'll realize her mistake soon enough. You can't force her to leave him for you, although you'd probably like to. You have to play it cool and let her come back to you once she gets sick of her boyfriend (again). Act like it doesn't bother you that you left and that you're getting on fine without her. That always seems to be the best way to get someone back. Just be happy. Unless her boyfriend is abusive, there's not a reason for you to jump in the middle there. Just sit back and wait. She should come around and realize she gave up a good guy for the same old loser. I hope everything works out okay for you in the end. I wish you the best of luck. Stay strong!
