 It sounds like you have good communication with your girlfriend. I think your best path would be to tell her that you are feeling very curious about your gay side and that you want to see what it is like to be with a man. She may want to take a break or split up while you explore that side of yourself, but at least you will have been honest with her and true to yourself.
Do not cheat on her by having sex with a man without her knowledge. There are diseases out there like HIV/AIDS and other STIs that you could transmit to her. That's not fair to her so don't go down that road.
Yes, it's a difficult thing to do but I think your best bet is to be honest with her. Give her the option to decide for herself what she wants to do while you explore your gay side.
