You've caught yourself in a funny situation! I have a few possible answers.
1. Maybe she's feeling guilty about something? Another guy? An ex-boyfriend? Promising her parents about not seeing anyone or something?
2. It's probably PMS. In that case, she'll get over it.
3. You should be causing a whirlwind of emotions in her right now! Being romantically involved with you is probably over-whelming for her. In which case, she'll eventually settle in and get used to it. And when she says "I hate you", she still means "I love you".
4. She likes everything about you except for one little detail that totally annoys her. You should talk to her about it if she seems irritated with something.
