It's already resulted in my having to leave uni once, and I'm scared I won't be able to get a job after uni, or that the stress will cause me to fail. I don't really know what I'm asking, advice maybe on how to cope with the stress, or how to explain gaps in my CV?

I can't apply for carers allowance as I'm a full time student.
I've discussed it with my university but they haven't really offered much help.
Thanks for the help,I'm feeling better today, it was just a bad day yesterday really.

If the person your caring for has been assessed and is found to be needing a carer then you can apply for the carers allowance. If not then I would have this done, speak to their GP, ask if Social Services can offer a support package to help you too.
You have a lot on your plate, so speak to somebody at your Uni and let them know your situation. Ask for help.
You need to sort 'your' future out so maybe it's time to sit with family members and see if there's a way to share the load. Explain how its affecting your studies. If after graduating your still sole carer then you may have to seek part-time work topped up with carers allowance.
Is the family member going to need long term care or is it temporary?

You could also try speaking to Carers UK-they should be able to give you practical advice, and have an online forum where people can give each other support. My other thought was whether you have had a carer's assessment from social services? You might find you are entitled to carers benefits and to respite. Don't give up-many employers have policies for people who are carers and offer things like flexible hours.
