I know for me, the " poisons have to leave the building" at least 3 times per week - whether with my wife's help or solo if need be. Do women have a similar number? If my wife and I are only having sex twice a month, should I assume she is taking care of business by herself several times a week?

I don't think most women have the same general need to climax like a guy does. When I was about your age I was still in the 4 - 5 times a week range. My wife was quite willing to cooperate, although other factors sometimes intervened so I probably flew solo about 10% of the time.
She didn't have the "need" like I did, although she regularly requested a good mattress-thrashing, scream-into-the-pillow orgasm just before her period started as a way to reduce cramps. Her "need" appeared after we started the preliminaries and foreplay - about half the time there would come a point when she would feel bloated or congested (her description!) if it didn't lead to orgasm, and on rare occasions she would be frustrated and moody afterwards if it didn't end with a good orgasm around my inserted penis.
