It doesn't in any way resemble what I would typically think of as cum - white, thick, 'creamy'. Is this normal? More importantly, is it healthy? is it a dietary thing? Any help would be appreciated.

It could have to do with your diet, as that determines a lot about the consistency. Also, if you frequently masturbate, that will make it more runny.
Maybe go a week without masturbating and see if it changes. If not, and you are worried about it, see a doctor... but I wouldn't worry if you're healthy in all other aspects.
