There could be plenty of reasons, depending on the context. I can give you two that I consider likely, but there are a number of other possibilities. If you post more info in a follow-up, I'll be happy to refine my guess.
First reason is, if he's a player, to mess with you. This kind of hot-cold behavior, disappearing and then reappearing like it's nothing, is a great way to play mind games with girls and get them to put out more. I've seen it work too many times, and it's even more effective on girls who claim they would never fall for it. Chicks dig drama more than contentment. If this is the case, he doesn't like you, and just wants sex.
Second reason that comes to mind is, if he's a nice guy, he may not want to screw things up. Maybe he couldn't think of anything good to say, or felt embarassed about something he had said, and only just worked up the guts to talk to you again. Now he's just trying to ignore the thing that bothered him and move on. This is most likely early in the relationship, but could happen later.
There are other possibilities - maybe you pissed him off and he only just got over it, maybe he's been seeing someone else, maybe he's just not that into you - but again, it's tough to narrow them down.
