Then refer to the future, what you look forward to, what you hope for, what you dream about, including her in it.
Express everything you think, feel and share from your heart. She will love it, because it's from YOU.

With a love letter, it's supposed to be heart felt. How you truly feel. They are supposed to be gushy and sappy. I don't think anyone here could give you a sample because they do not know how it feels to be in love with your fiance. It's supposed to be personalized. The way her face lights up when she sees you, the way her eyes sparkle after you kiss her. Maybe that could give you some inspiration.
As for ideas, google "love quotes" and see if there are any quotes that can inspire you as well.
