Have you told your fiance that you JUST need a little ME-time? I had a spot (botanical garden) that I used to go to when I needed to cram for exams or just needed peace and quiet. My BF (at the time) knew where I was but he also knew that if I needed some peace and quiet it was OK.
I would just explain it to your fiance.

I am an introvert, too. Thankfully I live in my own flat after years of living in staff accomodation and then a shared house. Can you afford to rent a small studio flat to get out of the crowded apartment? I take it your fiancee doesn't also live in the crowded apartment?
It's natural that your fiancee wants to be included in your life, and she might find it very frustrating if you need too much time on your own. Do you think she understands what it means to be introverted? You should always explain that it's nothing personal, you need some headspace. Don't let her think it's about her.
