My problem is that the herpes makes me really insecure. Why would he even want to date me? Couldnt he just date someone without it and save himself the hassle? Is it possible he's with me out of sympathy? I'm expecting to lose him at any time, though he hasn't gone yet. How can I handle this?

Hes dating you because he likes and probably loves you for the person you are. When in love we know each other is not perfect but still go on loving just the same.
I really doubt he is staying with you out of sympathy, try and start to relax a bit more and enjoy your relationship and what you have now. Being insecure will hold you back and hide your feelings from him, he may think then your not interested in him.
My girlfriend has a long term illness which I knew about before dating her, she had the same fears as you. She asked me one day why do I love her? the next day I wrote out 100 reasons why I love her, that really helped her move on, we are now still together in a loving relationship.
