I've seen him giving a weird glance to his friend whenever I entered the gym, and he had asked me a couple of times if I needed help with the weights, I always catch him looking at me and keeps smiling at me. I want to get to know him more, but I'm a shy person and my responds are always short and cold, which makes me look arrogant, however Im just really shy and i give a quick answer in order not to look awkward or stutter while talking. How do I seem more open so he could approach me one more time? How do I get rid of my shyness and nervousness?

Don't allow the shyness to be you. The thing is we all get nervous when it comes to certain things, but we must over come our fears. Don't let your feelings control you. Practice in the mirror what you would like to say to him, keep practicing until you feel more confident. But believe in yourself and realize that it is yourself that is holding you back nobody else, shyness is just an excuse, tell yourself you can talk to him and have a conversation and be confident.
