How could my ex have changed so much in just a few days?

me and my gf were together for two years and seven months. at first everything was perfect we were good friends for a little over a year and decided to date. we shared so much history together we were in love but in the last few months we've been having arguments about dumb little things. i had anger issues i never yelled or hit her i would never letmyself get to that point but ide give her the cold sholder till i calmed down. she put up with me for so long and just snaped one day and ended it because i got jelouse of her friends and how they were getting more attention than me. i tryed to take back what i had said but it was to late and now she has decided that she wants to just go out and party with a bunch of guys who dont care about her just want a good time. she said she is going to make up for highschool and do everything she couldent in a relationship. i am trying to accept the fact that we wont be together as lovers but just friends she agreed to it but i just can't stand the thought of her beeing in another guys arms. she was a big part in my life and yes i do want to move on and be friends but she deserves better i dont want her to end up messing her life up. i want her to finish college and have a good life. i just dont understand how she could change so much in a few days i was over protective and didnt let anyone who just wanted a good time neer her. and now shes surrounded by people who dont care about an education and just want a good time.
