We have talked about sex and neither of us want to go there yet, we both understand and respect both the law and each other. However I live in Australia and am coming over to visit her, and I'm just a little worried about getting into trouble for you know hugging and kissing and just dating her. We're about exactly 3 years apart and if she lived in Australia no-one would bat an eyelid because the age of consent here is 16 (and again it's not like we even want to have sex yet). We've been dating online and I guess I don't want to be "known about" by customs already, because it's not like that at all, I'm just coming to see her for a few weeks.I guess what I'm asking is, can I get into trouble for dating a 17 year old even if we have no intention of any sex whatsoever? I'm a bit worried that's all.

Listen,
I've been in this EXACT SAME SITUATION. No worries!!!!!!!!!! If you aren't having sex, you aren't violating any age of consent laws unless what you do isn't consensual (which it obviously will be). I talked to a lawyer, really. Don't sweat it!! And regardless, airport authorities wouldn't know the age of the girl anyway.

And she lives with her dad, who doesn't mind at all, he understands we won't do anything more than the usual couple stuff (hugging, kissing, holding hands etc).
She's meeting us at the airport with her dad. I plan on meeting her first, then her dad like a few minutes later. Would kissing her at the airport be ok? Or is this kind of thing weird / bad (from an authorities point of view, not relationship-wise)?

Most likely would depend on her parents and if they were ok with it. If they don't care, I can't imagine how the law would find out. That's just my opinion though, I don't know about the actual law.
