The issue is that we are all on eggshells around her as she seems to blow up at any opinion that anyone of us has. I suspect that she sees herself as more intelligent but we find it hard to bring up anything that will not get her going. I suspect she is unstable, to a point but everyone is uneasy...unsure of who she will go after next. Any tips on how to deal with her, appreciated.

This seems and extremely difficult situation and there is really not much you can do;
If it becomes totally unbearable have you and the others considered speaking to her superior as a group?
Maybe you can type her a letter,anonymously and explain the situation to her?
Best would be to treat her with respect and to try and avoid direct confrontation with her;
Best wishes and try to keep SMILING.
