Well, you are meant to be there for the christening service during which you make various promises / undertakings. Thereafter you pretty much define the role as you wish to. Conventionally children in the UK have two Godfathers and two Godmothers but I don't think that is a hard & fast rule.
In the UK at least I don't believe that there is any legal connotation in being a Godparent. You don't have any legal commitment to look after the child in the event of it's parents' death. I suppose that if the parents died suddenly without leaving a will or any other family and you wanted to take care of the child then the fact that you are a Godparent would be taken as evidence that the parents regarded you as a trusted friend etc.
The intention is that you should take a special interest in the child and attempt to be a positive influence on him / her and be there when needed. It shouldn't be an overly onerous responsibility.
