I'd love if it were possible to possibly get her to like me but I'm more than happy to just be her friend. Should I confess to her? Should I change the way I act around her so she doesn't feel bad?

I wouldn't tell her, you already know she doesn't like you THAT way, so why make it totally uncomfortable for her to be around you? ( by declaring you feelings).
JUST because YOU have a crush on HER, doesn't mean she OWES you to feel the same way. Sometime we crush on people who likes us back, sometimes on people who don't.
I think your BEST bet is to try and stop thinking about her and maybe avoid being around her too much as well. Pretending to be her friend won't help you move on. Accept that SHE doesn't dig you as much as you dig her. IT HAPPENS. It sucks, but it's part of life.
Like Tisha said, EVERYONE experience it, sooner or later.

I'd just move on. You want more than friendship with her. It would be awkward to pretend something else.
Unrequited love, oh, we all experience it. It's okay. You'll get past this and a few years from now, you'll wonder why you were so stressed by this.
