They don't want the men in strip clubs to look at the bar tenders too much. They want someone who looks ok, and can serve a great beer double quick.
In strip clubs they want the eyes of the men focused on the dancing girls as this is where they make their money.
In the Private Clubs I've been in (which to be fair are the posher ones in the UK) the barmaids are in shirts and skirts anyway, and it's table service so the guys can be tempted by private dances rather than sorting out change with the girl at the bar.
Apply and see what happens.
