I know that I am one of his favorite students and i'm one of the best at his subject in my school, although i've never really thought that I'm that important to him or that he sees me as just another student. I really want to thank him and tell him how grateful I am for just being so nice and how I feel about him on the last day of school, seeing as I'll never see him after that. I kind of don't want to tell him that he's my father figure because he has his own family and kids, and I don't want it to seem like I'm imposing or anything.Would that be too weird?

You could email him after you get your grade, that way it doesn't seem like you are sucking up.
Yeah, I wouldn't tell him the "father-type figure" thing. Just tell him thanks for teaching me and helping me further my education. Something like that. Personalize it in your own words or add whatever more words you wish.
