I don’t feel I have done anything wrong as I think it was a misunderstanding, but now she is refusing to talk to me anymore. I know she still likes me, and I still like her, but just want her friendship as I don’t feel ready for anything serious. How can I get her to be friends again?

You cant jump from serious relationship to just friends overnight. You are going to have to distance yourself from her, stop contact for a while, or at least cut it back a lot. Maybe the decision to be non-exclusive was more your idea than hers? If thats the case she is probably hurt by your actions, and she will need time to get over it. If you guys keep contact all the time, she wont be able to get over like you want her to. Back off and later on down the line THEN you can think about being friends.
