My fiance has to work the following Monday and I do not.Should I have to go home a day early with my fiance because she has to work or is it ok that I stay another night with my friends?

SHE has to work, you don't...seems pretty clear to me that you should be able to stay. Seems a little unfair for her to want you to return with her. That's quite unreasonable.
However, if you staying would cause a serious rift of problems in your relationship then maybe you should consider that & leave with her. I'm sure you can find something in your city that you can do to relax or have fun, maybe not as fun as where you would like to be :) But still try to enjoy the day!

What would be wrong about staying another night?? Sometimes a day away isn't bad at all. She trusts you, you trust her...as long as you're not going to cheat or anything, why not??
