Started the brisket 11:00PM Saturday, took it out of the smoker at noon on Sunday, put the ribs in for a 4 hour smoke. I wrapped the brisket in foil and let it rest in a warm cooler 4 hours, sliced it all up and we had dinner at 5:00PM. Damn fine BBQ!
